Chicken Breast Stuffed with Morale Mushrooms
Serves 4

 

3 tbsp. butter
1/4 cup finely chopped shallots
1 pound morel mushrooms, finely chopped
1/2 tsp. lemon juice
Sea salt
Freshly ground pepper
4 tbsp. dry bread crumbs
2 tbsp. chives or parsley, finely chopped
2-6 ounce chicken breasts

 

To Prepare the Stuffing

  1. Melt butter in skillet, add shallots.
  2. Sauté for 10 seconds.
  3. Add mushrooms, lemon juice, salt, and pepper, and reduce over high heat until the mushroom moisture evaporates.
  4. Remove from heat and add the bread crumbs and chives.
  5. Adjust seasonings and a llow to cool before stuffing the chicken breast.

To Prepare the Chicken Breasts:

  1. Preheat broiler.
  2. Set rack 6 - 7 inches from heat.
  3. Cut a pocket in the thickest part of the chicken breast (bone side).
  4. Make pocket big enough to hold 2 - 3 tablespoons stuffing.
  5. Close with a toothpick.
  6. Place skin side up on lightly greased broiler pan.
  7. Broil 4 or 5 minutes on each side.
